Ham Bone
Split Peas
1 large onion
2 bay leaves
½ tsp. Thyme (dried)
Salt and pepper (for taste)
Cover the ham bone with water and cook it for roughly three hours. Remove the bone from the water and pick off the meat. Put the meat back in the later and let this sit in the refrigerator overnight.
On day two, remove the fat from the meat. Additionally, sort through the peas to pick out any bad ones, and soak them in hot water for 30 minutes. Add the peas to soup mixture. Add 1 large chopped onion, 2 bay leaves and ½ tsp. Thyme (dried). Simmer the soup until it's done! If the soup is too thick you can add water.
You can also salt and pepper to taste and/or add ¼ tsp of liquid smoke (if desired).
