Meatloaf Cake

 Everyone loves a great April Fools’ joke. So what better way to share the laughter than with meatloaf, done just the way mom used to? Except this one may look a little more delicious.

And this little joke combines the excellent meatloaf recipe from Bob Brady’s Mom and a little bit of trickery from allrecipes.com

Ingredients:

  • 2 lbs of lean ground beef
  • 1 cup milk
  • 2 eggs
  • 4-5 slices of bread (good bread, with a grain)
  • 1 medium onion
  • 1tsp salt
  •  ½ to 1 tsp pepper
  • Other spices – if desired – such as Italian, depending on the flavor you want
  • Ketchup/Mustard/Steak Sauce/Spinach/Cherry tomatoes
  • Mashed potatoes

Preparation:

  • Beat eggs with a whip; add milk, salt, pepper and cut-up onion and mix. 
  • Add bread crumbs (from 4-5 slices). 
  • If you want other seasonings, this is a good time to add. 
  • Mixture should be moist, but not overly runny. If runny can add a more bread crumbs.
  • Add meat and mix well. 
  • Divide the mixture into the two round cake pans. Pat them flat.
  • Bake at 375-400° for 50-60 minutes. Since these are smaller loaves, check at 35 minutes.
  • Make a batch of mashed potatoes; add extra milk and whip until fluffy and spreadable.
  • When done, invert one loaf onto a plate and cover with a thick layer of mashed potatoes.
  • Place the other meatloaf on top, and finish covering the “cake” with the remaining potatoes.
  • Garnish with halved cherry tomatoes which look like real cherries.
  • For extra decoration, use ketchup, mustard or steak sauce – or spinach leaves for extra color.

And there you have it. A Meatloaf cake that will delight un-expecting taste buds.
